AT JADE, DINING IS BOTH A CULINARY AND ARTISTIC EXPERIENCE

A chef, sculptor, ceramicist, painter and calligrapher, Jade's Executive Chef Leong Chee Yeng is a master of both food and fine art.

Chef Leong Chee Yeng

Embark on an epicurean journey of fine Cantonese cuisine and artistic delight at the award-winning Jade, helmed by Executive Chef Leong Chee Yeng.

With an extensive and acclaimed career in Chinese gastronomy in Singapore and the region, the master chef brings a distinctive and personal approach to cuisine, grounded in expert kitchen techniques and knowledge of Cantonese and other ethnic Chinese cuisines, as well as his own deep artistic sensibilities.

In addition to his culinary craft, Chef Leong is a passionate and well-recognised artist with a flair for pottery, food sculpting, painting and calligraphy. Stepping into Jade is akin to visiting an exhibition of some of Chef Leong's finest works - from the ceramic table centrepieces, to handmade plates used to serve certain dishes, and the intricate gelatin sculptures that are presented to guests at the end of each meal for a truly spectacular conclusion.

As a testament to the prevailing significance of Chef Leong's artistry at Jade, it was an art piece by Chef Leong that inspired the look of the restaurant. Chef Leong once handcrafted a gelatin sculpture depicting birds perched on a tree. Based on this, the interior designer derived a leitmotif of birds local to Singapore. This design, seen especially in the specially commissioned wallpaper, now greets visitors to the restaurant.

Do look out for special dishes that are meticulously adorned with Chef Leong's artistic touch, combining the pleasure of gastronomy with the luxury of art appreciation. On weekends, Jade celebrates the time-honoured Cantonese tradition of Yum Cha with fitting elegance. Guests can choose from a constellation of signature dishes such as the much-loved Bak Kut Teh Xiao Long Bao, Crispy Lobster Dumpling, Braised Bird’s Nest with Truffle Egg White, Pistachio Muah Chee and more.

Chef Leong has garnered numerous industry and competition accolades including ‘Asian Cuisine Chef of the Year’ in Awards of Excellence category at the World Gourmet Summit 2016, which honours exemplary individuals in gastronomy. He also clinched the Silver Award at the Straits Times and Lianhe Zaobao ‘Best Asian Restaurants 2017,’ and led Jade Restaurant to the top spot at G Restaurant Awards 2015’s “Awards of Excellence”. Today, he continues to elevate his craft at Jade Restaurant, winning an ever wider audience for his culinary vision.
